Caramalized Onion Cheddar Burger with Fresh Tomato Ketchup

Ketchup Ingredients

2 lb Tomatoes (4 large tomatoes)
2 oz Onion (1/4 large onion)
2 oz red bell pepper
3/4 cup cider vinegar
1/4 cup Sutter Home White Cabernet Sauvignon
3/8 cup sugar
2 teaspoons salt
1/4 teaspoon dry mustard
2 whole allspice berries
1/4 teaspoon hot Hungarian Paprika
2 whole cloves
1/8 Stick of Cinnamon

Burger Ingrediants

1 cup of diced onions
1 and 1/2 Pounds of Ground Angus Beef
3/4 cup of cubed extra sharp Yellow Cheddar
6 White Hamburger Buns

 

Instructions

Directions:

Start the ketchup by pealing the tomatoes, then combine them with the onions and bell pepper in a blender. Puree the mixture then place it in a medium saucepan on the grill on medium high heat till it comes to a gentle boil.

While this is cooking for a full hour start your burger preparation by placing the diced onions in a small saucepan on the medium high grill, and let them cook till they have a good amount of brown color. Remove your onions from the grill and combine them with Ground Beef and cubed Cheddar in a Mixing Bowl. Hand Mix the ingredients. Form into Six Patties and put them aside.

When the tomatoe, onions and bell peppers have been cooking for an hour, add the cider vinegar, sugar, and wine. Tie the remaining spices in a cheesecloth and add it to the mixture. Keep the saucepan on medium high heat for another half hour.

When the ketchup has thickend so it sticks to back of your spoon, remove the cheesecloth spice bindle and set aside the ketchup.

Keep your grill on medium high and cook the hamburgers 5-7 on each side for medium. When There are two minutes to go place your buns on the top rack for some toasting.

Serve burgers with ketchup spread on top and bottom.
