Caramel Apple BBQ Burgers

Ingredients

CARAMEL BBQ SAUCE:
1/2 c. Caramel flavored ice cream topping
1/4 c.  prepared BBQ sauce
CARAMALIZED ONIONS:
3 T. extra virgin olive oil
1 clove fresh garlic, minced
2 medium sized yellow onions, sliced about 1/4" thick
2T dark brown sugar
2T Sutter Home chardonnay
PATTIES: 2 pounds ground sirloin
1 1/2 T.  Steak Seasoning
2 cloves fresh garlic, minced
1 1/2 T. Worcestershire
2 T. unsweetened applesauce (not chunky style)
1/4 c. Sutter Home chardonnay
GRILLED APPLE RINGS:
1 T. extra virgin olive oil
2 Granny Smith apples, peeled, sliced (to 1/4"), and cored
kosher salt
ground pepper
seeded round kaiser rolls, split
6 leaves of green leaf lettuce

 

Instructions

Prepare a medium hot fire in a charcoal grill or preheat a gas grill to medium. In a small bowl, combine the caramel topping and prepared BBQ sauce. Set aside. Begin making the caramelized onions by heating the oil and garlic in a non-stick, fire-proof skillet on the grill rack. Add the onions to the skillet, spreading them evenly on the pan. Sprinkle with the dark brown sugar, then sprinkle with the chardonnay. Stir occasionaly, about 15 minutes or until the onions have caramelized, then remove the pan from the heat. To make the patties, in a large bowl combine the ground sirloin, Steak Seasoning, fresh garlic, worcestershire, applesauce, and chardonnay. Handle the meat as little as possible to avoid compacting it, then divide the mixture into six equal parts, forming each into patties to fit the rolls. To prepare the apple rings, brush the olive oil on the apple slices, then lightly salt and pepper. Turn apple slices over and do the same, brushing lightly with olive oil, then sprinkling with salt and pepper. When the grill is ready, place patties and apple slices on the grill, cover, and cook. Grill apple slices 3 minutes on each side, then remove from grill. The patties should be turned once and cooked to desired doneness, about 6 minutes for medium. During last minute of grilling, add rolls, cut side down to the outer edges of the grill rack to lightly toast. To assemble burgers, on each roll bottom, place a leaf of green leaf lettuce, then burger patty, then 2-3 slices of grilled apple, followed by 4-5 caramalized onion slices, then drizzle with 1-2 Tablespoons of the Caramel-BBQ sauce. Add the roll tops and serve. Makes 6 burgers.
