Caramelized Onion and Gorgonzola Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.


1 small sweet onion, diced (about 3/4 to 1 cup)
1 tsp olive oil
1 clove garlic – crushed and minced
1 tsp brown sugar
1/2 cup crumbled gorgonzola cheese
1 1/4 pounds lean ground beef
1/4 tsp kosher or med ground sea salt
1/4 tsp freshly ground pepper corns
5 "French bread" hamburger buns
oil for grill
baby greens salad mix



Heat olive oil in a skillet at medium-high heat. When hot, add diced onions and cook until translusent. Add the garlic and cook for a minute more – make sure not to burn the garlic. Add the brown sugar and mix into the cooked onions until sugar begins to bubble. Remove mixture into a large mixing bowl and let cool for 10 minutes. Crumble the gorgonzola cheese and add to the mixing bowl. Add the beef, salt and pepper and combine all ingredients with clean hands. Separate into five equal portions and form into 1/2 inch thick patties. Heat grill and brush with oil. Half the buns lengthwise and butter lightly. Grill the burgers until medium well – grill time varies depending on model and size of grill. Remove the bugers onto a plate and cover lightly with foil. Brown the buns on the grill until lightly toasted. Add the bugers and a small handful of baby greens to the buns. Enjoy!
