Caribbean Burgers

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.


1 ½ pound ground chuck
¾ cup minced onion
1 ½ teaspoon grated nutmeg
 1 ½ teaspoon salt
3 to 4 tablespoons hot sauce, to taste
¼ teaspoon freshly ground black pepper
1 large ripe mango
1 lime 6 Kaiser Rolls, split
6 red leaf lettuce leaves



In a bowl with your hands mix ground chuck, onion, nutmeg, salt, hot sauce and black pepper until just combined (do not overmix) and form into six 1-inch-thick patties. On a cutting board, stand mango on its stem end and slice down sides as close to pit as possible. Peel and slice thinly lengthwise. Squeeze lime juice over slices. Grill on a lightly oiled rack set 5 to 6 inches over glowing coals about 5 minutes on each side, or until just cooked through. Lightly toast buns transfer burgers to buns and top each with a lettuce leaf and slices of mango. Serves 6.
