Caribbean Cumin Cool Burger

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

Ingredients

Hamburgers
• 2 pd ground sirloin
• 3 tbsp cumin
• Salt – to taste
• Pepper – to taste
• 1 onion – medium white – minced
• 1 jalapeño – minced
• 3 cloves garlic – minced 
1/3 cup panko bread crumbs
• 12 thick sliced pepper jack cheese slices
• Lettuce – Bibb shredded – approx 2 cups
• 6 hamburger buns – bakery fresh if available
Mango salsa
• 1 to 1.5 onion – medium white – minced (depending on size of mango)
• 1 large mango – diced
• 1 lemon – juiced
• 4 tbsp cilantro – minced
• 1 jalapeño – minced
• Salt – approx 1 – 2 tsp
• 2 tbsp mayonnaise

 

Instructions

Preparation: Preheat a medium-hot charcoal grill. To make the hamburger mixture: • Combine ground sirloin with cumin, salt & pepper – set aside for spices to permeate. • Mince 1 onion, 1 jalapeño, 3 cloves of garlic. Combine, in separate bowl, minced onion, jalapeño, garlic, bread crumbs, black pepper (to taste) – set aside. To make the mango salsa spread: • Prepare salsa = mince onion, jalapeño, and cilantro. Dice mango. Combine minced onion, jalapeño, cilantro, diced mango and juice of lemon. Add salt to taste – set aside for flavors to mix well. To make the patties: • Divide hamburger into 12 equal portions and patty. • Lay out burgers for prep – take 1 tbsp of previous combined onion, jalapeño, garlic, bread crumb mixture – spread on each patty. • Then place 1 slice of pepper jack cheese on top of patty and bread crumb mixture. • Then stack 2 patties together cheese sides facing each other. Grill – 3 – 5 minutes on each side. (cheese mixture will melt at first and then as the cooking continues will reform into patty formation) Mango salsa – combine salsa with 2 tbsp mayonnaise To assemble the burgers: Place a generous amount of the mango salsa over the cut sides of the buns. Place ½ cup of the shredded lettuce on each bun and add burger. Add the tops and serve.
