Cheesy Kiev Burger

Ingredients

1/2 cup mayonnaise
2 Tbsp tomato Ketchup
1 Tbsp sweet relish
1/8 cup finely chopped white onion
1 tsp Worcestershire
3 Tbsp unsalted butter
2 cups sliced white mushrooms
1 tsp kosher salt
3 cloves garlic
1/4 cup Velveeta cheese
3 lbs. 80 percent lean ground beef
1 Tbsp kosher salt
1 Tbsp cracked black pepper
vegetable oil for brushing grill rack
6 sesame buns
1/2 cup shredded lettuce
12 slices medium size tomatoes

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To make the sauce: Combine the mayonnaise, ketchup, sweet relish, white onion, Worcestershire sauce. Mix thoroughly to until creamy consistency. Refrigerate until serving.

To make the mushroom stuffing: In medium sauté pan, place butter and melt at medium high heat, add mushrooms, and 1 tsp kosher salt and cook until softened, then add garlic and Velveeta cheese, stir until cheese melted. Remove from heat and refrigerate until mixture is cool to touch.

To make the patties: Handling the meat as little as possible to avoid compacting it. Divide the meat into 12 equal patty portions and form the portions into patties slightly larger than the rolls allowing for shrinkage. At this time add kosher salt and cracked pepper evenly distributing to both sides of patties. Using the cooled mushroom stuffing, spoon stuffing evenly onto center of 6 patties. Place remaining 6 patties without stuffing on top of patties with stuffing. Mold the patties together sealing edges together to keep mixture from leaking during grilling.

Brush the grill rack with oil. Place the patties on the rack, cover, and grill until seared on bottom about 4 minutes. Turn the patties and continue grilling until done to preference, about 2 minutes longer for medium. During the last few minutes of cooking, place buns on grill rack to toast lightly. Remove burgers and buns place on plate and cover until ready to assemble burgers.

To assemble the 6 burgers: On each cut side of the 6 bun bottoms, divide all ingredients evenly in order: Spread of mayo sauce (reserving half of sauce for bun tops), a patty, and sliced tomato. On cut side of the 6 bun tops, divide remaining ingredients evenly in order: Spread of remaining mayo sauce, then add shredded lettuce. Put bottoms and tops together and serve. Makes 6 burgers.
