First make the burgers and refrigerate to keep burgers cold and easier to grill. To make burger: combine 2 pounds fresh ground chuck, 1 pkg frozen chopped spinach (drained to almost dry), ¼ cup chopped vildalia onion, ¼ cup chopped red pepper, 2 cloves garlic crushed, 2 tablespoons fresh chopped rosemary,1/2 teaspoon salt, ½ teaspoon ground pepper, ¼ cup Sutter Home Zinfandel Wine. Mix til combined but do not over mix. Divide meat into 6 sections then divide each section into two patties. Next make filling mixture: combine 1 cup dry ricotta cheese, ½ cup fresh grated Parmesan Cheese, ½ cup Fresh Mozzarella cut up, 2 cloves garlic crushed, ½ cup chopped Colavita drained Marinated Artichokes, ½ tsp salt , ½ tsp fresh ground pepper. Top 6 of the patties with the filling mixture, place the other patties on top. I shape the patties into oval shapes to fit the size of the french bread …then baste with wine and olive oil mixture. Refrig for at least one hour to firm up burger. (makes it easier to grill but not neccessary) Cook Burgers on medium hot grill approx 7 minutes each side. Combine ½ cup Colovita Extra Virgin olive oil and 3 cloves crushed garlic. Split french rolls if not pre-cut. Slice 1 pound Fresh Mozzarella into 6 good size slices . Combine Olive oil and garlic spread on french rolls and toast on grill. When patties are almost done top with fresh mozzarella cheese. Top with fresh ripe tomato and basil leaves and ENJOY with a glass of Sutter Home Zinfandel Wine !!! Makes 6 Burgers
