CHESAPEAKE BAY BURGERS WITH BUTTER BOURBON GLAZE

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

3 lbs Ground Chuck, 24% fat
1 Tabl. Louisiana Cajun Seasoning
1 Tabl. Garlic & Onion seasoning
1 Tabl. ground Ancho Chili Pepper
4 Tabl. minced onion
1 Cayenne pepper, seeded and finely chopped
6 cloves of Fresh Garlic, chopped
2 Eggs, lightly beaten
6 Tabl. "Sutter Home" Zinfadel
3/4 cup Seasoned Bread Crumbs
12 Freshly shucked Oysters
12 Slices Italian Proscuitto Ham, thinly sliced
6 Large Onion Rolls
8 Tabl. Butter, 4 to brush on rolls while they are toasting, and 4 for the Glaze

4 Tabl Butter
4 Tabl Bourbon Whiskey
4 Tabl Worcestershire Sauce
Vegetable oil for brushing the Grill

 

Instructions

1 – Place Ground Chuck in Large Mixing Bowl 2 – Add Cajun seasoning, Garlic & Onion seasoning, Ancho Chili Pepper,minced Onion, Cayenne Pepper, Garlic, Egg and Bread crumbs – mix well 3 – Form into 6 Large burgers 4 – With a Tablespoon – hole out the center of each burger and place two Oysters in the center. Replace the meat back into the center to complete. Now you have 6 Large Burgers – stuffed in the middle with two Oysters each. 5 – Wrap each burger with 2 slices of the Procuitto Ham and fasten with a toothpick to keep in place 6 – Brush Grill rack with vegetable oil before cooking 7 – Place Burgers on Grill – cook over Med – High heat approximately 6 minutes on each side until internal temoerature reaches 160 degrees 8 – While Burgers are cooking – on the Grill, melt half the butter in a small saucepan, or oven-proof bowl, and melt the other 4 Tabl in another bowl, add one-4 Tabl butter to the Bourbon and Worcestershire sauce, mix and keep warm 9 – Brush the Butter, Bourbon, Worcestershire mix on the burger while cooking. After turning the burger – brush again. 10 – Meanwhile brush the Onion Rolls with the other 4 Tabl melted butter set aside for them – place on the grill and toast 11 – When burgers are done and you are ready to serve – take out the toothpicks and place the burgers on the bottom half of the onion roll and cover with some more of the Butter-Bourbon Sauce, place on top roll and serve – Delicious !
