Chicago Steakhouse Burger with Creamed Spinach and Caesar Salad

When I heard that Build a Better Burger would be held in Chicago this year, I was immediately inspired by the great Chicago Steakhouses.The lean juicy steaks combined with the wonderful sides and a great glass of wine are the perfect combination. Midwest beef and California wine are a match made in heaven.

Ingredients:

2-1/2 pounds fresh ground grass fed beef rib eye steak
1/4 cup Sutter Home Cabernet Sauvignon
2 tablespoons steak sauce
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper

Creamed Spinach
2 tablespoons grapeseed oil
2 cloves garlic, minced
12 ounces cleaned baby spinach
1/3 cup heavy cream
½ teaspoon kosher salt
¼ teaspoon fresh ground nutmeg

Caesar Salad
1 clove garlic, mined
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
2 anchovy fillets
1/4 cup olive oil
1/4 cup Parmesan cheese
1 head Romaine lettuce, washed , dried and torn

6 red onion slices, brushed with oil
6 heirloom tomato slices
4 ounces Gorgonzola cheese, crumbled
6 Fresh artisan hamburger buns

Instructions:

Preheat a gas grill for direct grilling. Combine the ground rib eye, steak sauce, wine, salt and pepper. Form into 6 patties. Set aside.

Heat the grapeseed oil in a grill proof skillet. Add the garlic and stir for 1 minute. Add the baby spinach. Stir to wild. Pour in the heavy cream and continue to stir for 1 more minute. Season with salt and nutmeg. Remove from the heat.

Mash the anchovy filets with the garlic and lemon juice in the bottom of a small bowl. Whisk in the Worcestershire sauce, salt, olive oil and parmesan cheese. Toss over the romaine leaves. Set aside.

Place burger patties on hot grill. Grill for 4 minutes per side, or until desired doneness is reached. Place red onion slices on grill and grill until slightly tender. Brush cut sides of buns with a little of the anchovy oil. Place on side of grill and toast lightly.

Place a little of the Caesar salad on bottom of bun. Top with burger. Add grilled red onion and tomato slices. Spoon on the creamed spinach and top with crumbled Gorgonzola cheese. Place top on bun.
