Chicken Shawarma Burger

2 lbs ground chicken
1 lb ground turkey
3 tsp salt
2 tsp pepper
1 ½ cups olive oil
10 long pickles (plain, not sweet)
3 cloves garlic
1 cup mayonnaise
1 bag of ready to fry french fries
2 tsp oregano
3 pita rounds (6 large tortillas or 6 gyro rounds may be substituted)



1. With gloved hands, mix 2 lbs of ground chicken and 1 lb of ground turkey in a glass bowl with 3 tsp of salt and 2 tsp of pepper. 2. Make six long rolls about 6 inches long out of the meat mixture. 3. Place the links on a parchment lined cookie sheet. 4. Start a coal grill and brush the cleaned rack with olive oil. 5. When the grill is hot, brush the links with olive oil and place on the grill making sure they are separated and towards the center of the grill. 6. On a plate, cut 10 pickles length-wise into thin, long strips that are nearly transparent. 7. In a glass bowl add 3 cloves of diced garlic to 1 cup of mayonnaise and stir. 8. In another glass bowl, take approximately 35 ready to fry french fries and add a 1/2 cup of olive oil and 2 tsp of oregano. 9. Remove the links after they have been cooking for approximately 10 minutes and around 164F. 10. Place the seasoned fries on the grill. 11. Take 3 pita rounds and seperate each into two seperate circles (6 large flour tortillas or gyro rounds may be subsituted if pita is not available). 12. Brush the pita rounds with olive oil on one side (the less smooth side). 13. Remove the fries from the grill once they have turned medium brown. 14. Place the pita rounds oiled side down on the grill for 2 minutes each. 15. To assemble each of the 6 burgers: Take a pita round and slather approximately 2 tbsp of the garlic mayo, then add a meat link. On top of the link place 4-5 of the pickle slices and about 6 french fries all along the meat. Roll the link and toppings and wrap in a piece of parchment paper. Eat up while it's hot!
