Guacamole Mayo
1/4 cup mayonnaise
1 Haas Avocado
1 small tomato seeded and chopped
1/4 cup Vidalia onion finely chopped
1 tablespoon lime juice
1 tablespoon Colavita olive oil
salt and pepper to taste
Beef Patties
2 pounds ground chuck beef
1 tablespoon Colavita olive oil
1/4 cup cilantro
1 mild jalapeno chile finely chopped
1/4 cup finely chopped Vidalia onion
1/4 cup Kettle brand sea salt and vinegar chips
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Vegetable oil for light coating of the grill rack.
6 kaiser rolls split
6 red leaf lettuce leaves
12 large tomato slices cut thinly
6 slices Monterey Jack cheese
 ketchup

 

Instructions

Preheat gas grill to medium-high or secure medium flame on charcoal grill Guacamole Mayo is prepared by placing mayonnaise,avocado,tomato,onion,lime juice,olive oil, and salt and pepper in medium bowl. Using a hand blender slowly stir the mixture in a circular motion until most of the lumps have disappeared and there is a creamy consistency. Place in cooler or refrigerator until patties are ready. Take the Kettle chips and lightly grind them in a blender or food processor until they are the consistency of bread crumbs. To make the patties, combine the beef,oil,garlic,cilantro,jalapeno,onion, salt and pepper in a large bowl. Retrive the kettle chips(now kettle crumbs) and add them in the mixture. Develop the patties with an emphasis on not over working the meat. Form 6 equal patties ready for grilling. When the grill is hot, lightly brush the rack with veg oil and place the burgers on it with the hood closed. Turn them only one after 7-8 minutes for medium-well. Within the last two minutes of cooking place the rolls on the outer edge of the grill split side down and place the cheese slices on the patties until melted. Remove all rolls and patties and prepare for assembly. To build the burger take the Guacamole mixture out of the cooler or refridgerator and spread it over the inside of the top half of the rolls. Then, place two tomato slices side by side on the lettuce leaf for each burger and place on top of the patties along with ketchup and serve.
