Chilpotle Pepper Burgers

2 lb of fresh ground sirloin
1 teaspoon of course sea salt
Pepper, 6 – 8 ginds of a pepper mill
3 chilpotle peppers in adobo sauce,chopped up Adobo sauce from 7.5 oz can of Chilpotle Peppers
6 hamburger buns 
Deli Mustard
6 thin slices of tomatoes
6 thin slices of sweet onion
6 romain lettus leaves



In a large bowl mix with your hands the ground sirloin, salt, pepper, chopped chilpotle peppers and Adobo sauce (reserve rest of peppers for latter use) Form 6 large burgers (4" diam. 1 1/2" thick) Apply vegetable to hot grill (400 degrees) Cook burgers 4 minutes per side turn only once. Turn grill to low heat close grill top for 3 minutes. Open grill top and put buns on warming rack of oven, close top again for another 2 minutes. On serving plates place bun bottom's top each bottom with burger, add 1/4 teaspoon of mustard and 3 Tablespoons of ketchup. Top each with one slice of tomatoe, onion and lettus leaf add bun top and enjoy.
