China Town Burger
After eating Dim Sum at a great spot in San Francisco, I couldn’t stop thinking about this great spicy black condiment they had.I wanted to eat it all the time. So naturally, when I was making burgers one day, I added that to the ground meat, and it was fantastic!
2 cups of sliced white cabbage
1 carrot julienne
2 jalapenos deseeded and sliced
Â¾ medium onion
Â½ large cucumber, matchsticks
Dressing for Slaw:
2 tablespoons sugar
Â½ cup water
1 tablespoon fish sauce
Â½ cup white vinegar
1 teaspoon salt
Â½ teaspoon freshly ground pepper
Chinese Spiced Sauce:
4 tablespoons Hoisin Sauce
4 tablespoons Soy Sauce
2 tablespoons Chinese Black Bean Sauce
1 teaspoon Chinese 5 spice
1 Â½ lb ground beef sirloin
Â¾ lb ground beef brisket
Â¾ lb ground beef chuck
1 Â½ teaspoon kosher salt
Â¾ teaspoon freshly ground pepper
6 tablespoons of the Chinese Spiced Sauce
Â½ of a grated medium onion
3 cloves of garlic finely minced
6 fresh ciabatta buns
Prepare a medium-hot fire in a charcoal grill. First make the slaw so that it can soak up some of the vinegar dressing. This can be made a day in advance. Whisk together the sugar, water, fish sauce, vinegar, salt, and pepper. Now add the cabbage, carrot, jalapenos, onion and cucumber to the dressing and toss to coat. Allow this to sit for at least 40 minutes.
To make the Chinese Spiced Sauce combine together the Hoisin, Oyster, soy sauce, Chinese 5 spice, and the Black Bean sauce. Set aside.
For the patties, combine the ground beef sirloin, brisket, chuck, salt, pepper, onion, garlic, and 6 tablespoons of the sauce. Mix well, but handling it as little as possible to prevent density. Divide into 6 balls, and form into patties and refrigerate until ready to use.
Brush the grill rack with vegetable oil. Place the patty on the grill. Brush the sauce lightly on the top of the patty. Cover and cook for 3-5 minutes per side depending on how well you prefer it. After flipping the patty, brush on a little more sauce.
Toast ciabatta buns on both sides lightly.
To assemble, place a beef patty on the bottom bun. Place a nice portion of the slaw on top, spread a little more sauce on the bun, add the top bun, and enjoy!
