Chipotle Burgers with Fresh Cilantro

Ingredients

Ingredients:
2 Tablespoons olive oil
1/2 sweet yellow onion, chopped
3 cloves of crushed garlic
4 chopped canned chipotle peppers in adobo sauce*
2 Tablespoons salt
2 Tablespoons oregano
2 Tablespoons ground cumin
1 cup crushed jalapeno pretzel pieces
2 pounds ground chuck
1 egg, slightly beaten
Vegetable oil, for brushing the grill rack
6 White Buns
Condiments:
1 large tomato, sliced into 6 thin slices
2 avocados, thinly sliced into 9 slices each
1 bunch chopped cilantro
6 chopped green onions
6 Tablespoons salsa, medium hot and high quality

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover or preheat a gas grill to medium-high. In fire-proof skillet, heat 2 Tablespoons of olive oil until hot. Add onion, garlic and chopped chipotle peppers and stir until onions turn transparent. Add 2 Tablespoons adobo sauce from pepper can, salt, oregano and ground cumin. Mix quickly to form a paste. Remove from heat and cool. Put jalapeno pretzel pieces in a plastic sealed bag and pound with a meat hammer until crushed. In large bowl, combine crushed pretzel pieces, ground chuck, egg and cooled paste from skillet. Once mixed, divide into six equal patties to fit buns. Avoid excessive handling of mixture when forming patties to prevent compacting. When the grill is ready, brush the rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once. (about 4-5 minutes per side.) Check for doneness by inserting a meat thermometer into the center of the burgers and registering 160 degrees. Remove burgers from grill. Let the burgers rest while toasting the buns. Place buns, cut side down, on the outer edge of the rack to toast lightly. To assemble burgers, remove bun from the grill and place one meat patty on one toasted half. Place one thin tomato slice on top of each burger. Next, place three slices avocado on the tomato. Finish with a generous pinch of chopped cilantro and green onions. Finally, top with 1 Tablespoon of salsa and serve. Extra condiments may be used as garnish. Makes six burgers.
