Chipotle Burgers with Green Apple Tomatillo Salsa

Ingredients

Chipotle Mayonnaise:
½ cup mayonnaise
1 tablespoon TABASCO Chipotle Pepper sauce
Green Apple Tomatillo Salsa:
1 Granny Smith apple, cored and finely diced
4 tomatillos, husks removed and diced
½ cup red onion, diced
½ tablespoon fresh garlic, finely minced
¼ cup fresh cilantro leaves, chopped
1 jalapeno pepper, seeded and minced
¼ teaspoon kosher salt
1/8 teaspoon black pepper, freshly ground
Juice of half a lime
Patties: 2 pounds ground chuck
½ tablespoon TABASCO Chipotle Pepper Sauce
1 tablespoon fresh garlic, finely minced
½ teaspoon ground cumin
2 teaspoons kosher salt
¾ teaspoon black pepper, freshly ground
Vegetable oil, for brushing the grill rack
6 Kaiser rolls, split
6 red leaf lettuce leaves
6 thick slices of beefsteak tomato
6 slices of red onion

 

Instructions

Prepare a medium-hot fire in a charcoal grill, or preheat a gas grill to medium-high. To make the chipotle mayonnaise, combine all of the ingredients in a small bowl and mix thoroughly. Cover and refrigerate until serving. To make the green apple tomatillo salsa, combine all of the ingredients in a medium bowl and mix thoroughly. Cover and refrigerate until serving. To make the patties, combine the beef , TABASCO chipotle pepper sauce, garlic, cumin, salt, and pepper in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the patties to fit the rolls. Brush the grill with vegetable oil. Place the patties on the rack, and cook, turning once until done to preference, 5 to 7 minute on each side for medium. During the last few minutes of cooking, place the rolls, cut side down, on the outer edges of the rack to toast lightly. To assemble the burgers, spread the chipotle mayonnaise over the cut side of the rolls. On each roll bottom, place a lettuce leaf, a tomato slice, an onion slice, a patty, and an equal amount of the green apple tomatillo salsa. Add the roll tops and serve.
