Chipotle Cheeseburgers

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

Ingredients

1 lime
3 cloves garlic
1 7 oz Can Embasa Chipotles in Adobo sauce
2 lbs. 80% lean ground beef
6 leaves of Red leaf lettuce
2 Large Roma Tomatoes (Sliced lengthwise into slices)
2 Large California Avocados, cut into slices
6 Slices of Sharp Cheddar Cheese
1 package (8) Whole wheat buns
Oil for grill
Dijon mustard

 

Instructions

1. After rolling lime on counter to “juice up lime”, slice lime into 4 wedges using paring knife. 2. Squeeze juice from wedges into small cup. 3. Peel 3 cloves of garlic. Squeeze garlic (using a garlic press) into cup containing the lime juice. 4. Open the can of chipotles and place into food processor. 5. Addthe lime juice and garlic from the small cup. 6. Put lid on food processor. Blend the contents until they are well blended for about 10 seconds. Take the lid off and scrape the inside of the processor with a spatula to get any chunks down into sauce. Replace lid and blend again for another 10 seconds. 7. Use spatula to scrape contents of chipotle/lime/garlic mixture into a small bowl. 8. Place ground hamburger in large mixing bowl. 9. Take 5 rounded tablespoons of the blended chipotle mixture from small bowl and put on top of the ground burger. 10. Mix well. (I use my hands to ensure that the product is well mixed.) 11. Shape into 6 burgers. Place burgers on clean platter lined with wax paper. 12. Cover with piece of plastic wrap and put into refrigerator so that flavors can meld while preparing other ingredients. 13. While waiting for burger flavors to meld, wash and dry lettuce leaves, place onto large dinner plate. 14. Wash and slice tomatoes, place onto plate next to lettuce. 15. Peel and slice avocado into thin slices and place on remaining space on plate. 16. Cover with plastic wrap and put into refrigerator to keep cold. 17. Slice cheddar cheese and place onto separate plate. 18. Put burger buns into towel-line bread basket so they can be transported easily from the grill to table. 19. Prepare grill: Light and arrange charcoal for a hot fire. 20. Oil the grill with olive oil 21. Take burgers, cheese and bun basket out to grill 22. Cook burgers on grill. Cook 4-6 minutes. Flip burgers onto other side and cook 2-3 minutes longer . 23. Place cheddar slices onto burgers. Cook until cheese is melted (about 1-2 minutes. 24. Remove from grill onto clean platter. 25.Put buns onto grill inside of bun down, and toast until golden brown. 26. Take off grill and put into basket. 27. Take one toasted bun, put mustard on bun (to taste), place cheeseburger on bun, add lettuce, tomato and avocado slices. Place bun on top. 28. Enjoy.
