Chipotle Pork Burgers

Ingredients

1/2 cup mayonnaise
1/4 cup sour cream
1 tsp lemon juice
1/2 tsp ground chipotle pepper
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
3 lbs ground pork
3/4 tsp ground chipotle pepper
1 1/2 tsp minced garlic
3/4 cup grated Parmesan cheese
1/2 tsp salt
1/2 tsp pepper
olive oil for brushing
2 medium Granny Smith apples
6 slices sharp white cheddar cheese
6 soft Italian rolls, sliced

 

Instructions

Prepare dressing: combine mayo, sour cream, lemon juice, 1/2 tsp chipotle powder, garlic powder, 1/4 tsp each salt and pepper in medium bowl. Stir well to fully incorporate and refigerate until ready to use. For burgers: Preheat gas grill to 350 degrees. In large bowl, combine pork, chipotle powder, minced garlic, parmesan and salt and pepper. Mix until all ingredients are incorporated. Form mixture into 6 equally sized patties. Indent center of each patty with your thumb to prevent it from bulging. Brush grill with olive oil; brush both sides of burgers lightly with oil. Place on grill and cook approximately 5-7 minutes of first side. Flip burgers. Meanwhile, slice apples into 1/4 inch thick equal slices. Cut out seeds and core with tip of a knife. After burgers have cooked about 5 minutes on second side, top each burger with one apple slice, and top that with a slice of cheddar cheese. Lightly brush sliced sides of rolls wih olive oil and place on grill. Close cover and continue to cook 3-4 minutes more, until cheese is fully melted. Remove burgers and rolls from grill. Spread bottoms of rolls liberally with chipotle dressing. Top with a burger patty, and a top roll.
