Chipotle Prime Rib Burgers with Lemoncello Fennel Fondue and Grilled Tomatoes

Ingredients:

Patty Ingredients
3 lbs ground prime rib
2 tsp dried ground chipotle
2 tsp sea salt

Lemoncello Fennel Fondue Ingredients
2 tbls olive oil
1 large Vidalia onion, thinly sliced
1 large fennel bulb, thinly sliced
1 tsp sea salt
1/2 cup Lemoncello liquer
1/2 cup heavy whipping cream
3 cups shredded Fontinella cheese
2 tsp lemon zest
2 tsp fennel fronds, chopped

Grilled Tomato Ingredients

8-10 plum tomatoes, halved length-wise and seeded
2 tbls olive oil
1 tsp sea salt
1/2 tsp black pepper

12- 3/4″ slices of bakery-style peasant bread of any type of crusty, dense bread
2 cloves fresh garlic

Instructions:

Form prime rib patties
1. Preheat grill to medium high
2. Mix together ground chipotle and 2 tsp sea salt in small bowl
3. Shape six patties into size of slices of bread (patties will be longer and a big thinner than typical hamburger patties)
4. Sprinkle then press chipotle mixture into each side of patty
5. Cover patties and set aside

Create Lemoncello Fennel Fondue
1. Heat 2 tbls olive oil in a grill safe pan
2. Add vidalia onion, sliced fennel and 1 tsp sea salt and cook for five minutes stirring occasionally until slightly softened.
3. Add Lemoncello and heavy cream then cook for another five minutes, stirring occassionally
4. Add Fontinella cheese, lemon zest and fennel fronds then cook for another 3 minutes or until the cheese is melted
5. Cover and set aside

Grilling Tomatoes
1. Toss halved tomatoes with olive oil, sea salt and black pepper in a bowl
2. Grill over direct heat for two minutes on each side
3. Remove from grill, place in a bowl, cover and set aside

Grilling the burgers
1. Brush grill with oil
2. Place patties on grill and cook for 3-4 minutes on each side for medium doneness
3. Remove patties from grill, cover with foil and set aside

Grill the bread
1. Grill bread slices until slightly brown and toasty on each side
2. Remove from heat and rub one side of each slice with garlic clove

Assemble the burgers
1. Place a spoonful of fennel fondue on bottom slice of bread
2. Add one prime rib patty
3. Place two or three tomato halves on top of patty
4. Add another spoonful of fennel fondue
5. Top with final slice of bread
