Chipotle Roasted Poblano Turkey Burgers

Tex-mex is popular everywhere, but of course especially Texas!This turkey burger really pulls together some of the spicier pepper flavors of tex-mex cooking.

Ingredients:

1 Poblano Pepper

1 Canned Chipotle Chile
1 teaspoon Chipotle Chile Sauce from Can
2 tablespoons chopped Cilantro
1 Cup Mayonnaise

2 pounds ground turkey
1 package McCormick Taco Seasoning

1/2 Yellow Onion, very thinly sliced
3 cups shredded Iceburg lettuce
2 Avocados, peeled and sliced

6 wedges Original Laughing Cow Cheese
6 Sesame Seed Buns

Instructions:

Chipotle Mayonnaise
Preparation time: Approximately 5 minutes
On a cutting board, finely chop the chipotle chile. Finely chop cilantro In a small mixing bowl, combine chopped chile, chile sauce, mayonnaise and chopped cilantro. Set aside.

Roasted Poblano
Preheat gas grill to medium heat. Once hot, place poblano pepper directly over flame and roast until skin is blackened on all sides – about 5-7 minutes. Cool and run under water to remove blackened skin. Remove seeds and veins. Chop coarsely pepper.

Burgers
In a large mixing bowl, combine ground turkey, 1 package taco season mix and chopped poblano pepper. Form 6 patties. Place patties on grill and cook for 6 minutes on each side. Just before burgers are ready, place buns on grill for 2 minutes to toast.

Assemble:
Spread one wedge of laughing cow cheese on each bun. Place onions on bun. Place burger on bun. Top each burger with 1/6 of the chipotle mayonnaise. Top with avocado slices and shredded lettuce. Cove with top bun.
