chorizo burgers with pablano mango salsa and cilantro aioli

1/2 cup diced onion
1/2 cup diced poblano pepper
1/2 cup diced jicama
1 jalapeno pepper minced
1 cup diced mango
1Tbs fresh lime juice
1Tbs rice wine vinegar
1tsp peanut oil
21/4 pds ground chuck
3/4 pd fresh chorizo casing removed
2Tbs kosher salt
oil for brushing grill aioli
2 garlic cloves
1/4cup chopped cilantro
1/2 cup mayonnaise
2Tbs peanut oil
6 kaiser rolls split



For salsa combine onion,poblano pepper,jicama,jalapeno,mango,lime juice,vinegar,and oil in a small bowl and set aside For patties combine beef chorizo and salt and form into 6 patties. For aioli in a food processor combine garlic, cilantro and mayo and mix well. With the machine running slowly pour in peanut oil until combined. when the grill is ready brush the rack with oil and place patties on rack for 8 minutes per side or until internal temp reaches 160 degrees Put rolls on grill until toasted. place patties on bottom half of roll. top with salsa, spread top half with aioli and place on top of salsa
