“Chuck-Wagon Chuck’s Texas Cowboy & Cowgirl’s Cheeseburger”

Chuck-Wagon Mushroom Marinate

6 medium or 3 large Button mushrooms
1/3 cup Sutter Home Zinfandel wine
2 tablespoons Colavita extra virgin olive oil
3 tablespoons garlic pepper, divided
1 1/2 teaspoons chili powder

Cowboy Patties

2 pounds fresh ground Chuck 76/24
1/2 pound Johnsonville Grilling Chorizo
2 teaspoons salt or to your personal taste
Colavita Pure Olive oil for brushing the grill
1 12 cups shredded Pepper Jack cheese

Cowgirl Salad

1/3 cup Organic Ranch Dressing
2 tablespoons chili sauce
1 1/4 cups cold and crisp lettuce, rinsed and cut or torn into bite size pieces
3/4-cup fresh diced tomatoes
3/4 cup fresh ripe Hass Avocado, skin removed, seeded, and diced
3 green onions, chopped

6 fresh baked large hamburger buns
3 tablespoons butter, softened to room temperature


Wash the mushrooms, remove stems, pat dry, and dice. Blend the wine, olive oil, 1 1/2 tablespoons garlic-pepper, and the chili powder in a large bowl. Add the mushroom in with the wine marinade. Set aside for 1/2 hour to marinade.

Preheated gas grill to medium-high.

Gently blend together the ground Chuck and Chorizo (removed from the casing) with the marinade, mushrooms, salt, and form 6 patties slightly larger than the buns. Brush the grill with the olive oil. Place the patties on the grill and cook each for 5-7 minutes on both sides, or to your preferred doneness. With 2-3 minutes left on grilling the patties place 1/4 cup of the cheese on each patty.

Blend together the Ranch dressing, chili sauce, and remaining garlic pepper in a medium bowl; add the lettuce, tomatoes, Avocado, and toss together.

Spread the butter on the bun insides and place on the grill when you add the cheese to the patties to toast a light golden brown.

Blend remaining portion of the marinade and chili sauce with the dressing in a large bowl. Blend in the remaining garlic pepper, tomatoes, Avocados, and green onions. Add the lettuce and toss. Slice the mushrooms.

Place the cheeseburger patties on the bun bottoms, an equal portion of the sliced mushrooms, the Cowgirl Salad, and the bun top. Serve your Chuck-wagon burger for your cowboys and cowgirls, family, or friends to enjoy.
