Corned Beef Hash Breakfast Burgers with Fried Eggs

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

1 large Yukon Gold potato, cut into 1/4 inch dice.
4 tablespoons of unsalted butter, divided.
1/8 of a teaspoon of red pepper flakes
2 large sheets of heavy duty foil wrap
2 poblano chilies
1 large Vidalia onion, cut into 1/2 inch pieces
1 tablespoon of extra virgin olive oil
1 1/2 lbs. of ground chuck
1/2 lb. of corned beef, cut into 1/4 inch dice
7 large eggs
2 cloves of garlic, minced
1 tablespoon of pickling spice, finely ground
2 teaspoons of salt
1 teaspoon fresh ground black pepper
vegetable oil for brushing grill
6 Portuguese rolls, split

 

Instructions

Prepare a medium-high fire in charcoal grill with a cover or heat gas grill to medium-high.

To prepare potatoes: Place diced potatoes, 2 tablespoons of the unsalted butter, and red pepper chili flakes on 2 layers of foil sheets, sealing potatoes in tightly. Place foil pack on grill and cook for approx 20 minutes, flipping once, until potatoes are tender. Set aside to cool. While cooking potatoes, prepare vegetables.

To prepare vegetables: Brush poblano chilies and onion slices with extra virgin olive oil. Place over medium high heat and grill until lightly charred. Remove seeds from peppers and dice grilled peppers. Dice grilled onions. Set aside.

To prepare patties: Combine ground chuck, corned beef, one of the eggs, garlic, pickling spice, salt, fresh ground black pepper, potato mixture, grilled Poblanos, and grilled onions, mixing by hand, handling the mixture as little as possible. Form into six equal patties with an indentation in the middle of each patty.

When the grill is hot, brush the grill rack with vegetable oil. Place patties on hot grill and close lid. Flip patties once, until desired doneness, cooking on each side approx 5 to 7 minutes for medium. While patties are cooking, prepare fried eggs. Place fireproof skillet over medium high heat, and let pan heat thoroughly, melting 2 of the tablespoons of unsalted butter. Crack 2 eggs at a time into skillet, frying until desired doneness and yolks are to desired consistency, approx. 4 minutes for soft yolks.

To prepare buns, place split side down on grill and toast lightly. To assemble patties, place patty on bun bottom, top with one fried egg and cover with bun top. Serve and enjoy!
