Cowboy Up Burgers w/ Chipotle Bar-b-Que
Chipotle BBQ County Sausage & Beans:
10 oz. country sausage,finely chopped
15 oz. can pinto beans,drained and rinced
2/3 cup ketchup
2 chipotle peppers in adobo sauce,finely minced
1/2 tsp. salt
1/2 tsp. black pepper
1 clove garlic,peeled,finely minced
1/3 cup grated onion
1 lb. ground chuck
1 lb. ground sirloin
1 tsp. garlic salt
1 tsp. black pepper
1 tsp. cumin
2-3 tbls. vegetable oil for brushing grill rack
1 stick butter,melted
12 slices Texas Toast ,thick sliced white bread
Prepare a charcoal grill to a medium heat with a cover or preheat a gas grill to medium-hi.
Place a fire proof 10 inch skillet (w/ a lid) onto the preheated grill rack.Chop the country sausage.Drain and rinse the beans.Add the chopped country sausage and beans to the heated skillet with the ketchup.Mince the chipotle peppers and add to the skillet along with the lime juice,salt and pepper.Mince the garlic add to the mixture .Grate the onion add to the mixture.Cover and simmer for 15 minutes,stirring occationally.Remove from heat and set aside.Keep warm.
While the sausage is cooking prepare the patties.In a large bowl combine the ground chuck,ground sirloin,garlic salt,blk.pepper and cumin.Gently combine the mixture,try not to over handle the meat.Shape into 6 equal size patties.
Brush grill rack with vegetable oil.Place butter in a small fire proof saucepan.Place saucepan on grill rack until butter has melted.Remove from heat.
Place patties on grill and cook for 5-7 minutes per side covered ,turning only once.
Lightly brush butter onto both sides of 12 slices of Texas Toast,place all 12 slices of bread on grill rack and grill both sides to a golden color.Watch bread carefully.
Assembly:Place 12 slices of toast down and equally distribute the Chipotle BBQ’d country sausage & beans over 6 of the toasted slices of bread,top each 6 with a patty and place remaining 6 slices of toast 1 toast over each patty.Serves 6.
