Crabby Patty-Cake

Ingredients

Filling:

¼ cup Sour Cream
6 oz. Cream cheese – softened
2 tsp Worchester Sauce
½ tsp garlic powder
1 tsp Grey Poupon dijon mustard
3 TBS old bay seasoning
1 – 8 oz Phillips’s pasterized jumbo lump crab meat
6 oz. Of Velveta Cheese cubed
½ cup Panko bread crumbs

Burgers:

2 lbs ground chuck
2 tsp old bay seasoning
1 tsp Grey Poupon dijon mustard
2 tsp worchester sauce
2 TBS Sutter Home Merlot wine
1 tsp pepper
1 tsp sea salt

Old Bay to coat burger patties

Colavita Olive Oil for brushing of the grill racks
6 Kaiser rolls from the bakery, sliced in half horizontally
6 slices ¼ inch thick of fresh Tomato (Cherokee Purple or Red if you can not find the purple)

 

Instructions

Filling:

In a small bowl add:
¼ cup Sour Cream
6 oz. Cream cheese – softened
2 tsp Worchester Sauce
½ tsp garlic powder
1 tsp Grey Poupon dijon mustard
3 TBS old bay seasoning
Mix all ingredients well and reserve.

In a medium bowl:
Add the 8 oz Phillips’s pasterized jumbo lump crab meat
Then cube the 6 oz. of Velveta Cheese and add to the bowl
Then add ½ cup Panko bread crumbs and toss to coat the jumbo lump.
Pour the liquid mixture from the small mixing bowl over the coated jumbo lump & cheese cubes
Fold to mix all and refrigerate until you build the burgers.

Burgers:

In a large bowl place the 2 lbs ground chuck, 3 tsp old bay seasoning, 1 tsp Grey Poupon dijon mustard, 2 tsp worchester sauce, 2 TBS Sutter Home Merlot wine,1 tsp pepper & 1 tsp sea salt. Mix all ingredients well. Separate the mixture into 12 equal parts and form into patties.

Take 1 patty and place 1 – 6th of the filling in the middle and top with a second patty and seal the edges to form a stuffed patty. Place on tray and continue building the 5 other stuffed patties.

Coat each burger on all sides with the additional Old Bay seasoning.

Grease the grill racks with the Colavita Olive Oil.

Start the grill and preheat (15 mins) to a temperature of 450 degrees.

Place burgers onto the grill and close the lid, let cook 5 to 6 mins. Turn the burgers to create grill marks & cover, cook another 4 to 5 mins. Flip burgers, cover and cook 4 to 5 mins. Turn burgers to create grill marks, cover & cook another 4 to 5 mins.

During the entire time you are cooking the burgers, you are trying to maintain a grill temperature of 400 to 450 degrees.

To plate:

Place the bottom of the Kaiser roll on the plate, slice the tomato and lay a slice of tomato on each bottom.
Top with the burger and top with Kaiser roll lid.
