Cranberry Walnut Goat Cheese Burger

Ingredients

Makes 6 burgers
1 can whole cranberry sauce
6 tbs coarsely chopped toasted walnuts
2 lbs ground chuck
1 small onion, chopped fine
1/2 tsp coarse salt
1/4 tsp fresh ground black pepper
1 5 oz package goat cheese, divided into 6 even pieces
2 tbs Colavita olive oil, to brush grill
6 French bread rolls or a loaf of French bread cut into 6 4" pieces and halved
2 tbs Colavita olive oil
6 red tip lettuce leaves (optional)

 

Instructions

In small bowl, mix cranberry sauce and walnuts and set aside. Prepare grill to medium high heat for burgers. In large mixing bowl, mix beef, onion, salt and pepper. Shape mix into 12 patties. Place one piece of cheese between 2 patties and seal edges carefully. Repeat making 6 complete burgers. Brush grill with olive oil. Grill burgers 4 minutes each side or to desired doneness. Brush each roll or bread piece with olive oil. One minute before burgers done, place bread on grill and toast lightly. Remove rolls/bread and spread each piece (top and bottom) with 1 1/2 tbs of cranberry mix. Put lettuce leaves on bottom of roll/bread (if desired). Place burgers on rolls/bread bottoms and top with roll/bread tops.
