Crazy Cajun Cheeseburger PoBoy

Down here on da bayou, we are famous for our poboys and our red beans and rice.We also love a good ole American cheeseburger. This recipe combines several of the flavors that make Louisiana cuisine so famous with a tasty, flavorful beef patty for a unique result that will make your taste buds happy.

Ingredients:

Burgers
2 lbs ground chuck
1 tablespoon Lea & Perrin’s Worcestershire Sauce
Pinch of cayenne
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon sage
¼ teaspoon Garlic Powder
1 egg
½ cup of bread crumbs
¼ cup Sutter Home merlot
6 slices of Pepper Jack Cheese
2 fresh. Fully ripened Creole tomatoes
Vegetable Oil

Red Bean Spread
2 cans whole red beans
½ cup sweet onion – diced
½ cup bell pepper – diced
¼ cup plain yogurt
½ teaspoon Tabasco
1 pat of butter
8-10 jalapeno slices

Bread
2 loaves of fresh French bread
1 stick of butter

Instructions:

Burgers
Pre-heat a gas grill to medium/high or prepare a medium/hot charcoal fire.

Completely mix beef, bread crumbs, wine, egg, and seasonings. Form into 6 oval patties remembering that the burgers will be served on French bread. Generously apply vegetable oil to the grill racks. Gently place patties on the grill for 5-6 minutes per side depending on preferred temperature. Place pepper jack slices on burger one minute before removing.

Red Bean Spread
In medium sauce pan, combine butter, peppers, and onion. Cook on medium until vegetables are tender. Combine drained beans, peppers, onion, Tabasco, and yogurt. Puree for approximately 3 seconds

Bread
5 minutes before burgers are ready, butterfly the French bread, spread butter on the inside, and grill in a skillet for 40 seconds or until bread is golden brown.

Final Step
Generously apply red bean spread on to grilled French bread. Place burgers on loaves, top with tomato slices and serve.
