Creamy Garlic Shiitake Chicken Casserole Burgers

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium onion finely minced
  • 6 cloves garlic finely minced
  • 3/4 Cup sliced shiitake mushrooms
  • 3/4 Cup sliced baby Bella mushrooms
  • 1 extra large egg
  • 1/4 Cup mayonnaise
  • 1/4 Cup heavy cream
  • 2 Pounds ground chicken
  • 1 Cup shredded Colby Jack cheese
  • 1 1/2 Teaspoons sea salt
  • 3/4 teaspoon black pepper
  • 1 teaspoon onion powder
  • 3 Tablespoons Olive Oil (for brushing the grill and the rolls)
  • 6 Soft Kaiser Rolls
  • 2 Teaspoons Garlic Powder
  • 6 slices cheddar cheese
  • 1 Red Onion sliced thick (6 slices)
  • 2 ripe Avocado (12 slices)
  • 6 leaves Red Leaf Butter Lettuce

Instructions

  • Preheat a gas grill to medium-high heat
  • Heat 1 Tablespoon of extra virgin olive oil in a medium skillet on medium-high heat.
  • Add the minced onion and minced garlic to the hot oil and saute until soft and fragrant.
  • Add the shiitake and baby Bella mushrooms and continue to saute until tender and slightly caramelized.
  • In a large mixing bowl, beat the egg.
  • Add the mayonnaise and heavy cream and combine well.
  • Add the mushroom, onion, garlic mixture to the cream mixture.
  • Add the ground chicken to the mixture and mix well.
  • Add the shredded Colby Jack and mix well.
  • Season the chopped meat mixture with sea salt, black pepper and onion powder and mix well.
  • Form the mixture into 6 burgers (about 6 ounces each)
  • Brush the kaiser rolls with olive oil and sprinkle with garlic powder and set aside
  • Brush the grill with olive oil and place the chicken burger patties on the hot grill.
  • Cook for about 8 minutes on 1 side.
  • Flip the burgers over and cook for 7 minutes on the other side.
  • In the last 3 minutes of cooking, add the sliced cheddar cheese so that it melts nicely on top.
  • While the second side of the burger is cooking, place the red onion slices on the grill and grill for about 4-5 minutes.
  • Place the kaiser garlic rolls face down around the edges of the grill and toast slightly.
  • TO ASSEMBLE:
  • Place a toasted garlic kaiser roll on a plate
  • Place a leaf of red leaf butter lettuce on the hot garlic bun.
  • Place the cooked chicken casserole burger on top of the lettuce.
  • Place the grilled onion on top of the cooked patty.
  • Place the sliced avocado on top of the onions and finally put the garlic kaiser roll on the very top.
