PAM cooking spray for the grill
1/2 cup freshly chopped Vidalia onion
1/2 cup diced red bell pepper
1/2 cup golden raisins
1/2 cup vacuum-packed corn
1/2 cup freshly chopped parsley
2 tbsp. chopped Anaheim chili
1 tsp. freshly crushed garlic
1/4 tsp. ground cloves
1 tsp. salt
1/4 cup Chardonnay
1lb. lean ground chicken (not all white meat)
1 large avacado, sliced
1 mango, sliced
6 fresh Portuguese or French rolls (see note above about corn rolls.)

Use a large, 2-qt. bowl for mixing the ingredients. Chop the onions and red pepper and add to the bowl with the golden raisins and corn. Chop the parsley and add to bowl. Chop the chili very finely and add. Crush the garlic with a press and add. Add the cloves, salt, and Chardonnay to bowl. Stir these ingredients well to mix. With your hands, mix in ground chicken just until all ingredients are encorporated, but don't over-mix. Using a heaping half-cup of ingredients, gently shape the mixture into 6 patties and place on a waxed paper-lined tray. I use a Kenmore grill,s prayed with PAM spray, preheated on high and then set on medium heat. Gently place patties on grill and cook with lid closed for approximately 6 minutes on each side. Place each burger on a bun and top with 2 slices each of avacado and mango.
