Cuban Chipotle Burgers

Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.


1 lb ground chuck
2 lbs ground round
2 tsps chopped chipotles in adobe
1/2 lb thinly shaved proscutto
1 lb Manchego cheese sliced thin
1 C hot pickled cauliflower
1/2 C sweet pickle relish
1/2 C mayonaise



1. Gently mix together the meats, salt, pepper, and chopped chipotles with adobe. 2. Grill burgers over medium flamed grill until done to preference 3. As burgers are cooking, put cauliflower and pickle relish into food processor and pulse together until mixed well. 4. In a small bowl, mix togther relish mixture and mayonaise. 5. As burgers are finishing cooking ( the last 5 minutes) top with thinly sliced proscutto and Manchego cheese. Also, place buns on upper shelve of grill, away from direct heat, to warm them. 6. Spread mayo/relish mixture on buns, top with burgers and top bun.
