Dan’s Bacon Bliss

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.


4 LBS 90/10 ground beef
1 tsp smoked salt
1/2 tsp pepper
8 slices bacon
6 slicesButterkase cheese
6 burger buns
1/4 cup mayonnaise
1 tomato, sliced


Place bacon in skillet on grill, gently cook bacon. Collect rendered fat. Reserve 2 tsp rendered bacon fat per 8 oz burger. Set bacon aside for other uses. Mix liquid bacon fat with beef. Form into patties. Sprinkle with 1/2 tsp smoked salt and 1/4 tsp pepper.
Place burgers on hot grill and cook 3 minutes. Flip and place a slice of cheese on each burger. Put lid down on grill and cook until internal temp reaches 140F. Remove burgers and rest for 5 minutes.
Toast all buns on grill.
Spread mayonnaise on all buns, sprinkle with remaining salt and pepper.
Assemble with burger patty, then tomato, then lettuce.
