Deli Burger

Pairs well with:

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Chicago is second only to New York when it comes to great delis. When traveling to the Windy City a huge deli sandwich is always a must. This burger pays homage to the great deli tradition.

Ingredients:

Deli Sauce:
1 ½ c. Mayo
½ c. Ketchup
Juice of ½ large lemon
1 tsp. Paprika
¼ tsp. Onion Powder
1 tsp. Dried Cilantro
1 tbsp. capers
¼ tsp. Cayenne Pepper
½ Tbsp. Dijon Mustard
½ Tbsp. Sutter Home White Merlot wine
Burger:
2 pounds freshly ground chuck
1 teaspoon Worcestershire sauce
1 Tablespoon Dried onion Flakes
1 Tablespoon Dijon Mustard
1 Tablespoon Sutter Homes White Merlot Wine
1 tsp. kosher salt
½ tsp. freshly ground pepper
Toppings:
12 Slices Swiss cheese
1 Jar of Sauerkraut drained (Divide into six portions about ¼ cup per serving)
1 ½ lbs. Pastrami (divide into 6 ¼ lb. portions)

1 Loaf Dark Rye Bread
1 Stick of butter
Aluminum foil

Instructions:

Cover ¼ of the grill with aluminum foil. Preheat a gas grill to medium-high heat.

Combine all ingredients for deli sauce in a 4 cup round Ziploc Plastic Container and shake well to combine thoroughly. Chill Deli sauce while preparing burgers.

To make burger combine the chuck, worcestershire sauce, dried onion, dijon mustard, wine, and salt and pepper while handling as little as possible. Shape burgers into 6 patties. Cover loosely with plastic wrap and set aside. Butter 12 slices of bread on one side and set aside.

When the grill is ready, place patties on the rack, cover and cook, turning once until done to preference. (5-7 minutes on each side for medium doneness). Place butter side bread on the foil portion of the grill to lightly toast. Remove toasted bread and set aside. After toasting bread start a pile with ¼ lb of pastrami then 1 serving sauerkraut and cover with 2 slices of cheese on the foil side of grill, heat until cheese is melted. (Repeat until you have six portions made)

To assemble the Deli Burger add a generous amount of Deli Sauce on the untoasted sides of the bread. Take one piece of sauced bread and place burger on the sauce, then place pastrami/sauerkraut/cheese melt on top of burger. Finally top with second sauced bread, repeat until all burgers have been assembled. Serve and enjoy
