Derby Burger

Ingredients

1. 1/4 c red wine vinegar
2. 1/2 c olive oil
3. 8 drops fresh lemon juice
4. 1/4 t salt
5. 1/2 t freshly ground pepper
6. 3/4 t worcestershire sauce
7. 1/2 clove garlic
8. 1/4 t dijon mustard
9. 2 tomatoes cut into 1/3 inch rounds
10. 1 ripe avacado
11. 8 strips fried bacon, crumbled
12. 1/3 lb saga blue cheese, chunked
13. 1 1/2 lbs ground chuck(85%)
14. 1/2 lb ground turkey
15. 1 bunch watercress, stems removed
16. 6 (soft) hard rolls lightly brushed with olive oil.

Instructions

1. Place first 8 ingredients in a blender and blend until smooth. 2. Fry bacon. 3. Remove stems from watercress and rinse. 4. Turn gas grill onto medium high. 5. Place ground chuck, ground turkey and saga cheese in bowl, mix with hands and form into 6 equal patties 6. Lightly oil grill. Place patties on medium high grill for approximately 4 minutes one side, 3 1/2 minutes second side. Remove from grill when medium to medium well done (whatever your preference). 7. While burgers are resting, place buns on grill and lightly brown on cut side, approx. 1-2 minutes. 8. Combine watercress, bacon and 4T dressing in bowl, mix. 9. Now to assemble: place bottom bun on plate, a heaping 1/4 c of watercress mixture on bottom bun, then the burger, next the tomato, the avacado slices (2), and finally the top bun…take a bite and enjoy!
