1 package refrigerator jumbo biscuits
3 peaches cut in half and pitted (white peaches, if in season)
1 pint premium vanilla ice cream
6 sprigs of fresh mint leaves
Place biscuits on a cookie sheet on indirect heat and close cover to bake. Set aside to cool. Split in half. Place peaches on grill cut side down on medium heat for 5 minutes. Assemble the warm peach on the bisciut with a dollop of ice cream and a sprig of mint leaves, top with the other half of bisciut.
