Diablo Honey BBQ Beef Burgers with Cayenne Fried Onions

Ingredients

Honey BBQ Sauce:
1/2 cup prepared BBQ Sauce from jar
1/2 cup mayonnaise
3 tablespoons honey
Beef Patties:
*2 roasted bell peppers diced
2 pounds ground chuck
2 teaspoon fresh chopped garlic
2 tablespoons Sutter Home Pinot Noir Wine
2 teaspoons kosher salt
1 teaspoon black pepper
Cayenne Fried Onions:
2 cups French Fried Onions from can
1 teaspoon cayenne pepper
Vegetable oil for brushing the rack
6 slices pepper jack cheese
6 Kaiser Rolls, split
6 green leaf lettuce leaves
6 slices red onion
6 slices tomato

 

Instructions

Directions: Preheat a gas grill to medium high heat. In a small bowl whisk the BBQ sauce, mayonnaise and honey, when blended well, set aside. *Roast the peppers by placing them on heated grill, turning them frequently with tongs until all sides are blistered and blacken all over, about 10 to 15 minutes. Put the peppers in a plastic or paper bag, and let steam for 15 minutes. Peel, seed and remove core from peppers and discard. Dice the peppers into ½ inch by ½ inch pieces. To make the patties, combine the beef, diced roasted bell peppers, garlic, wine, salt and pepper in a large bowl, and mix with your hands, gently folding the ingredients together. Divide the mixture into 6 equal portions and form into patties. Refrigerate for 15 minutes. In a one gallon zip close baggie add the onions and cayenne pepper. Close the baggie and gently shake the cayenne pepper, to coat evenly. Place a 10 inch, fire-proof skillet on the heated grill rack, over Direct-High Heat and heat the pan for 3 minutes. Next add the seasoned fried onions, and cook for 4 to 6 minutes until heated through-out and crispy. Set the pan aside. Next brush the grill rack with vegetable oil and add the beef patties over Direct-High heat. Close the cover and cook, turning the patties once, about 4 to5 minutes on each side. After flipping the burgers, wait two minutes and add a slice of cheese to each patty. In the last minute of cooking the patties, place the rolls cut side down on the outer edges of grill rack to lightly toast. To assemble the burgers, spread a generous amount of honey BBQ sauce on the top of bottom bun and then place a lettuce leaf, onion slice, tomato slice, beef patty and top with crispy onions, a dollop more of honey BBQ sauce, add the roll tops and serve.
