2 1/2 LB GROUND CHUCK
1 1/2 CUP VIDALIA ONION, CHOPPED AND DIVIDED
2 TSP SALT
2 TSP FRESH GROUND PEPPER
1 TBSP. THYME
2 MEDIUM JALAPENO' PEPPERS, SEEDED, AND CHOPPED
1 CLOVE GARLIC, CHOPPED
1/2 CUP BROWN SUGAR
3/4 CUP COLAVIA OLIVE OIL, DIVIDED FOR MARINADE, BRUSHING GRILL AND TOASTING BREAD
1/2 CUP SOY SAUCE
1 TSP ALLSPICE
2 LOAVES (ABOUT 1 LB EACH) UNSLICED CIABATTA BREAD
4 MEDIUM MANGO, PEELED, SEEDED AND CHOPPED
1 CUP MAYONNAISE
3 TBSP OLIVE TAPENADE
3 CUPS ARUGULA LEAVES

 

Instructions

PREPARE GAS GRILL FOR MEDIUM-HIGH HEAT. COMBINE GROUND CHUCK WITH 1 CUP VIDALIA ONIONS, SALT AND PEPPER IN A LARGE BOWL. FORM INTO 6 PATTIES TO FIT 4 " SLICES OF BREAD. SET ASIDE IN A COOL PLACE. COMBINE THYME, JALAPENO' PEPPERS, GARLIC, BROWN SUGAR, 1/2 CUP OLIVE OIL, SOY SAUCE AND ALLSPICE TOGETHER IN A MEDIUM BOWL. POUR 1/2 MARINADE OVER PATTIES; LET SIT FOR 20 MINUTES. BRUSH GRILL WITH OLIVE OIL. PLACE PATTIES ON GRILL. COOK FOR 7 MINUTES, BASTING WITH REMAINING MARINADE DURING COOKING TIME, TURN AND COOK FOR AN ADDITIONAL 8 MINUTES OR UNTIL DESIRED DONENESS. BASTE ALSO DURING THIS COOKING TIME. REMOVE FROM GRILL; COVER, SET ASIDE. CUT EACH LOAF OF CIABATTA BREAD IN HALF HORIZONTALLY. TRIM ENDS OFF. HOLDING TOP AND BOTTOM TOGETHER CUT EACH LOAF INTO THREE 4" SANDWICH TOP AND BOTTOMS. BRUSH EACH CUT SIDE OF BREAD WITH OLIVE OIL. PLACE ON GRILL. GRILL UNTIL LIGHTLY BROWNED. COMBINE MANGO AND REMAINING 1/2 CUP ONION IN A MEDIUM BOWL. SET ASIDE IN A COOL PLACE. COMBINE MAYONNAISE AND OLIVE TAPENADE IN A SMALL BOWL. SET ASIDE IN A COOL PLACE. TO ASSEMBLE BURGERS: SPREAD MAYO-OLIVE TAPENADE MIXTURE ON TOASTED SIDE OF THE TWELVE SLICES OF BREAD. PLACE 6-7 LEAVES OF ARUGULA NEXT, THEN PATTY, A GENEROUS PORTION OF MANGO SALSA, AND TOP WITH REMAINING SLICES OF CIABATTA BREAD. YOU MAY NEED A PICK TO HOLD TOGETHER.
