Double Down Royal Reuben Burgers & Grilled Peppered Cabbage With BBQ Thousand Island Sauce

Ingredients

  • BBQ Thousand Island Sauce:
  • 1/2 Cup mayonnaise,
  • 3 tablespoons ketchup,
  • 2 tablespoons prepared original barbecue sauce, (I used KC Masterpiece Original BBQ sauce),]
  • 1/4 Cup sweet relish,
  • 3 tablespoons sweet onion, minced,
  • Patties:
  • 2 Pounds ground corned beef,
  • 2 tablespoons Sutter Home Red Mascato,
  • 6 patties (151-g each patty, 2-Pounds total) prepared choice ground beef chuck, (I used Bubba burger brand),
  • 1 1/2 Teaspoons kosher salt,
  • 1 1/2 Teaspoons freshly ground black pepper,
  • Preparation Peppered Cabbage:
  • 1 1/2 Cups green cabbage, shredded,
  • 1/2 Cup sweet red and orange pepper, seeded, julienne cut,
  • 1 teaspoon celery seeds,
  • 1/2 teaspoon caraway seeds,
  • 1/2 teaspoon granulated sugar,
  • 1/2 teaspoon freshly ground pepper,
  • Burger Preparation and Construction
  • :
  • 1 1/2 tablespoons unsalted butter,
  • 1 tablespoon extra-virgin olive oil,
  • **1 (9-inch) cast iron seasoned skillet, (for grilling peppered cabbage),
  • 12 slices good quality Swiss cheese,
  • 1/4 Cup unsalted butter, melted, (for basting burger buns),
  • 6 sweet burger buns, (I used King’s Hawaiian Original Hawaiian burger buns brand),
  • **6 wooden or plastic topped toothpicks,
  • 6 small size gherkin dill pickles,

Instructions

  • 1. Prepare grill grates with non-stick spray.
  • 2.
  • Preheat a gas grill to medium-high heat level.
  • 3.
  • In a large bowl, add ground
  • corned beef and red mascato wine, and glove lined hands, knead the wine into the corned beef to mix, or until well combined. Form corned beef wine mixture into six equal portioned patties, place formed patties onto a parchment paper lined large serving platter or plate along with the six prepare beef chuck patties. Season all of the twelve patties sides equally with the 1 1/2 Teaspoons kosher salt and 1 1/2 Teaspoons freshly ground pepper and keeping corned beef patties separated from chuck patters; set aside until ready to grill.
  • Preparation Peppered Cabbage:
  • 1.
  • In a large bowl, add shredded cabbage, sweet peppers, celery seeds, caraway seeds, granulated sugar and 1/2 teaspoon ground black pepper and toss well to mix and combine ingredients; set aside until ready to grill.
  • Burgers and Peppered Cabbage Preparation and Construction:
  • 1. Place the six corned beef patties onto the left side of grill and the six chuck beef patties onto the right side of grill; placing patties about 1-inch apart from each other. Grill to cook patties 3 to 5 minutes per side, flipping once, cook until internal temperature reaches 145 to 150 degrees F. During last minute of grilling cook process of burger patties, add 1 slice of cheese onto each burger patty. Remove parchment paper from serving plate, wipe clean if needed to prevent cross-contamination and place melted cheese topped burger patties, keeping
  • the six corned beef patties onto the left side and six chuck beef patties onto the right side of serving plate; cover with a sheet of aluminum foil to keep warm.

  • Meanwhile, burger patties are resting and kept warm prepare to grill seasoned peppered cabbage . Add the 1 1/2 tablespoons butter and olive oil into cast iron skillet, place skillet onto far opened corner of grill over indirect heat to heat over medium-high heat. Add seasoned peppered cabbage into the heated butter and oiled skillet to grill to cook 3 to 4 minutes, or until almost tender, turning frequently to prevent over browning. Remove grilled skilled with cooked seasoned peppered cabbage from heat and place near grilled cooked burger patties.
  • 3. Meanwhile, burger patties and seasoned peppered cabbage are resting to set and prepare, prepare to butter and toast burger buns. Using a pastry brush, brush each bun tops and bottoms inside with even amounts of the 1/4 Cup melted butter. Place buns onto grill, butter sides down, toast to cook 30 seconds to 1 minute, or until lightly browned and toasted, remove toasted burger buns.
  • 4. Prepare construction assemble of burgers. Place even spoonful portions, (about 1 rounded tablespoon), of BBQ thousand island sauce on the inside bottom side of each bun and spread evenly. Place a cheese topped chuck beef patty over top of sauce covered bottom bun. Add an additional smaller portion of BBQ thousand island sauce spoonful, (about 1 to 2 Teaspoons) over top of placed cheese topped chuck beef patty. Place a cheese topped corned beef patty over top and add a generous even portion of grilled peppered cabbage and top each burger with remaining bun tops side down. Using a topped toothpick spear to add a small gherkin dill pickle and place onto the tops of each burger to complete construction assemble of burgers.
  • 5. Serve constructed assembled burgers immediately with a chilled glass of Sutter Home Red Mascato and enjoy.
