Drunken Ham Burgers

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

i bought a large amount of ham and I always divide it up into meal sized portions, date and label. Since I had so much of it, thought I would grind some up and make burgers or loafs out of them.
They make an unusual and delish burger.

Ingredients:

burger part:
1 pound ground ham
1/2 pound ground pork
1/4 cup bourbon (use the good stuff)
3 tablespoons pineapple juice
1 teaspoons dijon style mustard
1/4 cup shallots, diced
1/4 cup marmalade
2 tablespoons Thai style chili sauce
1/2 teaspoon each salt and pepper.

Sauce:
1/2 cup brown sugar
1 tablespoons hot horseradish
2 tablespoons dijon mustard
1/2 cup water
1/2 cup pineapple juice

Rolls:
6 Onion Kaiser rolls

Cheese:
6 Extra sharp American cheese slices

Toppers:
6 pineapple rings, either fresh or canned
12 tablespoons mayonnaise
6 slices raw red onion
6 crispy lettuce leaves

Instructions:

Combine the ham, pork, bourbon, juice, mustard, shallots, marmalade, chili sauce and salt and pepper.
Form into 6 patties.
Next make the sauce by combinng sauce ingredients in a fireproof sauce pan, bring to a simmer, and let simmer while burgers cook.
Slice the rolls in half lengthwise.
Put the burgers on a pre heated med high grill.
Grill the pineapple rings as well.
Cook the burgers to 160° internally.
The last 5 minutes of cooking put one slice of cheese on each burger and toast the buns.
Slather the buns with mayo, add a burger, top with grilled pineapple, onion, sauce and lettuce
