Early Bird Burger

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

I love a good breakfast, but Its hard to pass up a burger, regardless of the time of day. So, I thought I would combine all the components of a basic burger with all my favorite things that Ilove for breakfast, and this is what I came up with.

Ingredients:

Patties
1 1/2 pounds ground beef (80-20%)
1/4 cup ketchup
4 green onions (diced)
1 1/2 teaspoons kosher salt
3/4 teaspoon black pepper

Hash browns
3 Tablespoons vegetable oil
1 1/2 cups shredded potatoes
3/4 cup diced onion
3/4 cup diced red bell pepper
3/4 teaspoon kosher salt
1/2 teaspoon black pepper

12 slices thick cut bacon
4 tablespoons maple syrup
6 everything bagels
6 slices pepper jack cheese
6 large eggs
6 green lettuce leaves
6 tomato slices

Instructions:

Pre heat grill, medium setting.

To make the patties, combine all of the ingredients in a large bowl and mix by hand. Just enough to combine all ingredients evenly. Form into 6 1/4 pound patties, making a small indentation in the middle of burger. This will ensure even cooking and prevent the burgers from puffing up in the middle. Set aside until grilling.

To make the hash browns, add all ingredients to a fire proof fry pan. Saute over medium heat approximately 15 minutes, or until golden brown. Grills will vary. Remove and set aside.

Add bacon strips to a fire proof baking sheet and place on grill. Cook 5 minutes, turn bacon over, pour a teaspoon of maple syrup over each strip and cook another 5 minutes. Longer for crispier bacon. Remove from grill. Place bacon on paper towels to absorb grease. Set pan aside, with bacon grease to be used for cooking eggs.

Place bagels face down on grill and toast approximately 1 1/2 to 2 minutes. Keep an eye on them so as to not let them burn. Remove and set aside to assemble.

Place burgers on grill. Grill 2 minutes, flip, add cheese and grill another 2 minutes. This will give you a good medium rare burger.Remove. Burgers will continue to cook while setting. Adjust cooking times to your desired doneness.

Place cookie sheet back on grill. Brush bacon grease to cover sheet well. Carefully break 6 eggs onto sheet, leaving space between each. Be careful not to break yolk. Cook for 4 minutes, leaving eggs sunny side up. Remove. While eggs are cooking, top each bagel bottom with, lettuce, hash browns, tomato, burger, bacon. Add egg to each burger, bagel top and enjoy!
