Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.

Ingredients

Pickled Onions:
1 Spanish Onion
1/2 c. white wine vinegar
juice of 2 limes
1 1/2 tsp. sugar
1/4 tsp. fresh ground sea salt
1/2 tsp. fresh ground pepper
Patties:
1 1/2 lb. ground chuck
12 oz. Mexican chorizo
6 chipotle peppers in adobo sauce (finely chopped)
6 slices of high quality swiss cheese
vegetable oil for brushing grill rack
6 whole wheat hamburger rolls

 

Instructions

Prepare a medium-hot fie in a charcoal grill. To prepare pickled onions: slice onion into thin rings. Mix with remaining ingredients. Cover & refrigerate at least 30 minutes. Onions will turn a bright pink color. To prepare patties: First cook chorizo in a cast iron skillet over coals until done. Drain off remaining grease using a strainer. Mix together ground chuck, chorizo and chopped chipotles. Brush grill with oil. Place patties on rack and cover. Grill until done to preference,, 5 to 7 minutes on each side. 2 to 3 minutes before burgers are done, place a slice of cheese on top of each burger, cover so cheese melts slightly. To assemble burgers: place a patty on each bun, top with a generour amount of pickled onions. Add top of bun and serve.
