With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

Chorizo, by itself, is delicious, but not very practical to cook as a patty. This burger combines other ingredients into the patty to make it much easier to grill or fry, and still get all that delicious chorizo flavor. Then staying with Mexican theme, a salsa relish, Mexican cheese, guacamole and a toasted cheesy bun, all complement the chorizo.

Serves: 6 Regular-Sized Burgers

INGREDIENTS:

Salsa:

  • 2 tomatillos, diced
  • ½ cup toasted corn kernels
  • ½ cup tomatoes, finely diced
  • ½ cup pepperoncini, finely diced
  • 4 tablespoons pepperoncini juice
  • 1 dash of salt, or to taste

Burger:

  • 1 pound pork chorizo
  • 1 pound ground pork
  • 3 eggs
  • ¾ cup coarse-ground breadcrumbs
  • 6 torta or bolillo rolls
  • 6 tablespoons butter
  • 1 cup grated añejo cheese (or pecorino romano)
  • 2 cups guacamole
  • 6 tablespoons spicy mayonnaise (optional garnish blended to your own heat preference)

INSTRUCTIONS:

Salsa:

  1. Blend salsa ingredients together and let marinate for at least 15 minutes

Burger:

  1. Beat the three eggs, then gently blend in pork, chorizo, and breadcrumbs until uniformly combined
  2. Form into six patties that conform to type and size of roll being used
  3. In a large skillet pan fry patties 4 to 5 minutes per side over medium heat
  4. Butter rolls and sprinkle with grated cheese (reserve some cheese for garnish) and toast on grill

Assemble:

  1. Spread guacamole on bottom buns, put patties on top, spoon salsa over patties
  2. Sprinkle grated cheese on salsa and leave top bun off to allow guests to see what they are going to enjoy!
