Enchantment Chorizo Burgers

Green Chili Queso:
6 ounces shredded Mexican cheese blend
3 ounces chopped green chilies, drained
1/4 cup mayonnaise
2 tablespoons sour cream
1 tablespoon freshly squeezed lime juice
salt and pepper to taste

2 pounds freshly ground chuck
6 cloves garlic, minced
1/4 cup white onion, finely chopped
3 tablespoons New Mexican red chili powder
2 tablespoons dried Mexican oregano
2 tablespoons sweet paprika
2 teaspoons medium-ground black pepper
2 teaspoons ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
2 tablespoons red wine vinegar
2 tablespoons dry sherry

8 ounces (1/2 can) refried black beans
1/4 cup prepared picante sauce
6 large flour tortillas
1 large ripe avocado, peeled, pitted, and sliced



Blend queso ingredients together. Set aside, covered and chilled.
Prepare grill over medium-high fire. Mix patties ingredients together and shape into 6 patties. Coat grill rack with cooking spray. Cook patties on grill, cooking for about 6-8 minutes until desired doneness, turning once.
Blend beans and salsa together in a grill-proof pan. Cover and set on outer edge of grill rack during cooking to warm through.
Spread warmed bean mixture on tortillas and top with cooked patties. Mound queso on patties and arrange avocado on top. Wrap tortillas around patties to serve.
