Even Dad Likes These Sliders

Pairs well with:

Cabernet Sauvignon

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients:

3 TBSP olive oil
2 sweet onions, chopped
12 cloves garlic, chopped
1 cup light mayo
juice from 2 small limes
1/2 TBSP black pepper
1 TBSP sea salt
2 cardamom pods
1/4 cup coriander seeds
1/4 cup peppercorn mix (with pink peppercorns)
1/4 cup pistachio meats
6 lbs ground chuck
1/4 cup honey
1/2 cup soy sauce
2 TBSP smoked sea salt
18 dinner rolls
Colored Cocktail Toothpicks
3-4 firm Roma tomatoes
2 TBSP mustard powder (not spicy)

Instructions:

In cast iron skillet, caramelize onions and garlic in olive oil, about ten minutes. In a bowl, add caramelized ingredients to mayo, lime juice, pepper and sea salt. Use immersion blender to blend ingredients into a spread with small chunks. Set aside or refrigerate.

In an herb or coffee grinder, grind cardamom, coriander, peppercorns and nuts into a fine powder. In a large bowl, place ground chuck. Add ground ingredients, honey, soy sauce, smoked sea salt and powdered mustard. Mix together well. Form 18 3-oz patties, slightly rounded.

Turn grill temp to high. Place patties on grill and sear, about five minutes. Turn them over and sear, about 3-4 minutes. If burgers are burning, lower temp to medium-high and move more done burgers to cooler spots. Otherwise, lower hear to med and cook until done (med-rare. They will continue to cook a little anyway).

Slice rolls in half, lengthwise. Slice tomatoes into 1/8 inch slices (18 in all). Generously spread the spread on both sides of inside of roll, place one slider on the bottom half, then one slice of tomato, and the the top of the roll. Secured with a toothpick.
