Everybody Loves Lasagna Burgers

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

1 lb Ground Chuck
2 cloves Garlic, peeled and minced
4 tbsp. Italian Parsley, chopped
1/2 cup Italian seasoned Bread Crumbs
1 tsp. Pepper, freshly ground
4 cups very hot water
6 ‘no boil’ Lasagna Noodles
1 large loaf crusty Italian Bread
Vegetable oil, for brushing the grill rack
1 cup Parmesan Reggiano Cheese, grated
1/2 cup Pecorino Romano Cheese, grated
1-1/2 cup Mozzarella Cheese, shredded
16 tbsp. Ricotta Cheese
24 tbsp. Tomato Sauce

 

Instructions

In a large bowl, add the ground chuck. Add the garlic and parsley. Add the 1 tsp. of salt, reserving the additional two half teaspoons for later use. Add the breadcrumbs. Add the pepper. Carefully work mixture with hands until all ingredients are mixed well. Shape mixture into 8 patties, about 4 inches in diameter, 1/4” thick. Put patties on a plate and cover with plastic wrap. Place in refrigerator for at least 20 minutes. Heat the water in a pot on the grill to very hot, but not boiling. Add the very hot water to a bowl. Add 1/2 tsp. of the reserved salt. Immerse the lasagna noodles in the water for a minimum of 10 minutes, until softened. Cut bread into 5” thick slices, and then cut in half lengthwise to make a ‘top’ and ‘bottom.’ Grill bread for 4 minutes, cut side down. Remove from grill Add the tomato sauce and the remaining 1/2 tsp. salt to a pan over medium heat on the grill and warm, about 5 minutes. Heat the grill to medium hot and brush with vegetable oil. In a small bowl, combine the Parmesan and Romano cheeses and mix well. Remove patties from refrigerator and grill them over medium heat, about 5 minutes. Flip burgers. Add 2 tbsp. ricotta cheese, evenly spread, to the top of each patty. Add 1/8 cup mixed parmesan and romano cheeses, evenly spread. Add 1/8 cup mozzarella cheese, evenly spread. Close the grill cover and grill for an additional 5 minutes. Remove the noodles from the water and pat dry with paper towels. Cut each noodle in half. Assemble the burgers as follows. Put the bottom bread on a plate. Add 2 tbsp. sauce and spread around. Add one noodle half. Add cheese covered patty. Add 2 tbsp. sauce. Add one noodle half. Add another cheese covered patty. Add 2 tbsp. sauce. Add one noodle half. Add 2 tbsp. sauce and spread around. Add bread top. Push down lightly to incorporate ingredients together.
