1 lb lean ground lamb
3 TBL grated onion
2 TBL dijon mustard
1 tsp salt
1 tsp course pepper
1/2 tsp ground ginger
4 TBL hoisen sauce
2 TBL olive oil
4 TBL feta cheese
1 c wild greens
3 cloves finely chopped garlic
2 artisian rolls
thinly sliced red onion



grate onion. chop garlic. add mustard mix ground lamb,garlic, salt, pepper, onion, and ginger together. Let this mixture sit cold for 8 hours. Put this mixture into two patties. Take the small Webber Smokey Joe Grill and start coals. When coals are white hot srart the burgers. Grill on both sides. Each side should be crispy on the outside. Brush with hoisen sauce on both sides the last few minutes of grilling. Split rolls. Brush with olive oil. Set on grill open side down until crisp. Crumble feta cheese on bottom roll half, top with lamb patty. Top patty with thick layer of wild greens and fresh basil leaves. Add thinly sliced red onions.
