Feta Stuffed Gyro Burger

Ingredients

Tzatziki Sauce

1 Cup Plain yogurt
1/2 Cup diced cucumbers
3 garlic cloves, finely chopped
1tsp. salt
1tsp. pepper
2 tbs. fresh lemon juice
1tbs. olive oil

Lamb Pattys

3lbs. ground lamb
3tbs. chopped fresh mint leaves
3tbs. chopped fresh oregano
2tbs. salt
2tbs. pepper
2tbs. olive oil
3/4 cup feta crumbles
6 tbs. chopped kalamata olives
olive oil spray (for grill)

6 large hamburger buns (preferably freshly baked from grocer)
1/2 stick softened butter

6 romaine leaves
4 roma tomatoes,each sliced into 3 slices

 

Instructions

Combine all of the Tzatziki ingredients in a bowl. Cover and refridgerate until ready to use. Combine the lamb, herbs, salt, pepper and olive oil in a bowl, and mix well to incorporate all ingredients. Divide meat into 6 (1/2lb.) portions, and then divide those in half. Make thin round pattys with each portion of meat. Top 6 of these with 2 tbs. feta crumbles and 1 tbs. chopped olives. Next, place another patty on top and mold the edges so that none of the filling is showing, and the edges are sealed. Heat gas grill to medium/high and let it get hot for about 5-10 minutes. Spray the grill with the oil spray and place patty’s directly over flame for approximately 5 minutes on each side. While the burgers are cooking, butter both the top and bottom buns. When burgers are almost done, grill buns butter side down until they become light brown. Place burgers on the bun, top with 2 slices roma tomato and 1 piece of lettuce. Top with 1/4 cup of Tzatziki sauce and top bun. Enjoy while trying not to make a huge, sloppy mess!
