Fired Up Chipotle Lamb Burger With Onions, Arugula & Yogurt Sauce

Ingredients

  • For the Onion Toppings:
  • 4 Cups white onions cut in rings
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon granulated chicken bouillon
  • 1/2 teaspoon fresh ground pepper
  • For the Lamb Burgers:
  • 2 Pounds ground lamb
  • 2 Teaspoons kosher salt
  • 1 tablespoon ground curry powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon fresh ground pepper
  • 3 chipotle in adobo peppers cut lengthwise
  • 6 hamburger buns with sesame seeds
  • For the Yogurt Sauce:
  • 1 Cup Greek yogurt
  • 1 tablespoon raw honey
  • 1/2 tablespoon garlic powder
  • 1/4 teaspoon lime juice
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon kosher salt
  • For the Arugula toppings
  • 2 Cups fresh arugula
  • 2 tablespoons fresh squeezed lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 1/2 Cup queso fresco (crumbled)

Instructions

  • For the Onions Topping:
  • Coat a large saute pan with olive oil, toss in onions and bring the pan to medium-high heat and cook the onions for 4 minutes. Add the next three ingredients, mix well and cook 4 more minutes. Turn the heat off and let cool.
  • For the Lamb Burgers:
  • Place ground lamb in a large mixing bowl. Add the next five seasoning ingredients. Mix well and make six 1 inch thick hamburgers. Cook burgers on a preheated grill for 4 minutes per side for medium rare. An instant-read thermometer inserted into the center should indicate 160 degrees. Set aside to rest for 4 minutes. Warm the buns on the grill for two minutes on the top rack.
  • For the Arugula Topping:
  • Mix all ingredients together and keep cool until ready to use.
  • For the Yogurt Sauce:
  • Mix all ingredients together and keep it cool until ready to use.
  • Putting it all together:
  • Assemble the burger by adding two tablespoons of yogurt sauce on the bottom bun, place the lamb burger patty, add one piece of chipotle in adobo, two tablespoons onions, arugula and top with a toasted bun.
