Flavors Of Caribbean Burger With Plantain-Zinfandel Jam, Red Onion-jalapeno-Tomato Relish And Planta

Ingredients

  • Plantain-Zinfandel Jam:
  • 1 Ripe Plantain
  • 1 Cup Pure Coconut Oil, Virgin-Unrefined Cold Pressed, Divided for various steps of preparations
  • 2 tablespoons chopped fresh ginger
  • 1/4 Cup Sutter Home Zinfandel
  • 1/4 teaspoon salt
  • Patties:
  • 1 tablespoon Allspice Berries
  • 1 teaspoon black peppercorns
  • 2 Teaspoons dried Thyme
  • 2 Teaspoons crushed red pepper
  • 1/2 teaspoon freshly grated nutmeg
  • 2 Teaspoons salt
  • 2 Pounds fresh ground beef Chuck
  • Relish:
  • 1/4 Cup coconut oil
  • 2 Teaspoons lime juice
  • 2 Cups thinly sliced red onion
  • 1 Cup, seeded Roma tomatoes, thinly sliced lengthwise
  • 1/2 Cup, seeded jalapenos, thinly sliced lengthwise
  • 1/4 Cup fresh Cilantro leaves, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Other items:
  • 6 slices of Gouda cheese
  • 6 Sesame topped hamburger buns, split
  • 6 iceberg lettuce leaves
  • 1 Cup Plantain chips

Instructions

  • Preheat a gas grill to medium high.
  • Slice the plantain lengthwise in the middle. Brush the cut sides with coconut oil. Place them on the grates, cut side down, cover the grill. Grill for 4 minutes and turn them over. Grill another 4 minutes, covered. Remove from the grill and place them on plate to cool. Scoop the
  • grilled plantain and add to a blender jar. Add ginger, Zinfandel and salt. Blend till smooth Jam is formed. Transfer to a bowl.
  • Place allspice, peppercorns, thyme and crushed red pepper in a spice grinder and grind to fine powder. Transfer to a small bowl. Add nutmeg and salt. Mix. Sprinkle this mixture on to ground Chuck placed in a large bowl. Mix well using a large fork. Divide into 6 equal portions and form 6 patties. Transfer them to a large baking dish and place them in a ice box or refrigerator.
  • To make relish, whisk oil and lime juice in medium-sized glass bowl. Add remaining ingredients of the relish, mix well and set aside.
  • Set the grill to medium heat. Brush the rack with coconut oil. Place the patties on the rack, cover and grill for 4 minutes. Turn the patties over and grill for 3-5 minutes or until done to your liking. Place cheese slices on the patties, cover the grill. Grill for another minute or so till the cheese melts. Transfer the patties to a platter.
  • Brush the cut sides of the buns with coconut oil and place them on the grill, cut side down. Grill them until lightly browned, 1-2 minutes.
  • To assemble the burgers, place lettuce leaves to cover the browned side of the bottom buns. Spread about 1 tablespoon of Plantain-Zinfandel jam on each of them. Add patties and then add few tablespoons of relish on each patty. Spread few plantain chips on the relish. Add the top buns and serve.
