Florida Summer Citrus Burger
Ingredients
- 80/20 Ground Beef
- 1 Tablespoons Orange Juice
- Salt and Pepper on on each side to taste
Instructions
- Pattie:
- Combine 4 Pounds ground beef 80/20
- 1 Tablespoons Orange Juice
- Salt and Pepper
- Form beef into regular size patties and sprinkle with salt and pepper on both sides.
- Heat grille to 450 and place patties on the grill for approximately 3-4 minutes per side until cooked to medium.
- Cook another 2 minutes with a slice of high quality Pepper Jack cheese until melted.
- After cooking, allow the patties to rest for 3-5 minutes under foil.
- Orange Marmalade Bacon Jam:
- In a medium size sauce pan cook 1 Pounds. of bacon on medium high heat for approximately 15 minutes until cooked completely and beginning to brown.
- Remove cooked bacon from the pan and drain bacon grease but leave a small amount of grease at the bottom of the pan.
- Cook 3/4 of diced red onion and 1 Tablespoons of chopped garlic, and a pinch of salt and pepper until translucent (approximately 10 min)
- Add the bacon back to the sauce pan with 1/3 Cup of water, 1 Tablespoons of Sutter Home Sauvignon Blanc.
- After 5 min, add 1/3 Cup Orange Marmalade Jelly, 1 Teaspoon chilli powder, and 1 Tablespoons balsamic vinegar.
- Cook for another 10 minutes or until the Jam thickens and begins to darken.
- Remove from the heat and place into a food processor or blender.
- Blend until combined but still slightly chunky.
- Lemon Lime Mayonnaise:
- Put 3/4 Cup of good quality mayonnaise in a bowl,
- Use a microplane to zest a lemon and lime, approximately 1 Teaspoon of each and add to the bowl.
- Add 1/2 Teaspoon of lemon juice and 1/2 Teaspoon lime juice
- Combine all ingredients with 1 Teaspoon of salt
- Grilled Pineapple Slices:
- Cut and prep ripe pineapple and grill 1/4 inch slices with olive and salt on each side
- Grill for 2 min on each side
- Arugula:
- Prep arugula with a Teaspoon of olive oil to coat
- Brioche Buns:
- Spread light smear of butter on each bun and grille for approximately 30 seconds until lightly grilled on the inside.
- To Prepare the Burgers:
- Spread a tablespoons of lemon lime mayonnaise on bottom and top of the brioche bun.
- Place the cooked burger with melted pepper jack cheese on the bottom bun.
- Add grilled pineapple on top of the pattie.
- Spoon approximately 1 Tablespoons of the Orange Marmalade Bacon Jam on top of the pineapple slice.
- Add arugula on top of the Bacon Jam and finish with the top of the brioche bun.
