Four Cheese Baby Sized Bacon Topped Full Bodied Beer Blended Buttermilk Biscuit Breakfast Burgers

12 strips Applewood Smoked Bacon
6tbsp Bread Crumbs
3 tbspGrated Parmesan Cheese
3tbsp Grated Cheddar Cheese
1 3/4 tsp Salt
4tbsp Full Bodied Ale
5 tsp Bacon Drippings
1 lb Ground American Kobe Beef (see comments)
1 Slice of butter to grease the biscuit baking sheet
6 Buttermilk Biscuits
6 Eggs
6 Small Slices of Meunster Cheese
6 Small Slices of Cheddar Cheese
6 Small Slices of Havarti Cheese
12 Slices of Butter
Olive oil to brush on the grill



Fry Bacon on a fireproof skillet allowing the bacon drippings collect underneath. Save drippings for later. In a large bowl combine bread crumbs, grated parmesan and cheddar cheese, and salt. Mix well. Add the Beer and Bacon drippings to the mixture. Gently fold the ingredients into the ground beef, taking care to distribute the filling evenly without handling the beef any more than necessary. Form into six patties and set aside in a cool place. Grease a baking sheet with the butter and place the biscuits on the sheet. Cook the biscuits with the grill covered until they are golden brown. Usually about 14 minutes. Fry six eggs in the same pan used for the bacon and keep on a low heat. Stack a slice of Meunster on top of a slice of cheddar and a slice of Havarti on top of that. Repeat this until you have six stacks of three cheeses. Place a slice of butter on top of each stack. Brush the grill with olive oil. Place the patties on the grill with a slice of butter on top of each patty. The butter will melt in as it cooks. After about five minutes on Medium High heat, flip the burgers. Cut the Buttermilk Biscuits in half and place them on the top rack on tin foil to keep them warm. Continue cooking the patties until nearly cooked through (about another five minutes). Put the stacks of cheese on top of the burgers with the butter side facing down. Let the cheese melt and remove the patties from the flame and onto the biscuits. Break the bacon strips down to size and arrange them on the burgers. Top with the fried eggs. Enjoy!
