Fried Green Tomato Cheeseburger topped with Smoked Chipotle Aioli

Fried green tomatoes are a proven favorite, especially in the South! Added to that, the hamburger is simply the best grilled food and then to modernize it I have added the smoked chipotle aioli on top! This combination is truly amazing and if tried, will become a great American favorite!!!

Ingredients:

Burger

1 1/2 lbs ground chuck

1/2 cup sour cream

1 T Montreal steak seasoning

1 T Dales steak sauce

1/4 cup Sutter Home Merlot

1 cup shredded sharp cheddar cheese

3 T chopped garlic

1 small minced onion

1 sleeve crushed club crackers

2 T dried parsley

1 t liquid smoke

Fried Green Tomatoes

3 medium to large green tomatoes

1/2 cup plain flour

1 T salt

1 T pepper

2 eggs, beaten

2 T water

1/2 cup plain breadcrumbs

1/2 cup cornmeal mix

1 cup vegetable oil

Smoked Chipotle Aioli

1/2 cup mayonnaise

1/2 sour cream

2 smoked chipotle chilies, in sauce (3 chilies if you want it hot)

1/4 t mustard

1 T chopped garlic

1/4 t salt

1/8 t ground black pepper

shredded iceberg lettuce

6 slices mild cheddar cheese

5 slices thin sweet onion

6 large hamburger buns

Instructions:

Burger

In a large mixing bowl combine all ingredients until blended. Pat out into six even patties. Place on preheated, medium heat grill. Turn heat to low and cook covered for six minutes. Turn, cover and let cook an additional six to eight minutes, depending on how well you want your burger. During the last minute place cheese slices on top of burger just long enough to melt. Remove from grill to platter. Loosely cover with aluminum foil to remain warm.

Fried Green Tomatoes

Rinse and dry tomatoes. Slice into 1/2″ slices discarding top slices with core. Spread out onto cutting board and salt and pepper, to taste, liberally seasoning slices. Let the tomatoes stand for about 15 minutes. Using three Pyrex dishes, put flour, salt and pepper into one dish and blend together. Put eggs and water into another and mix with a fork until incorporated. Put breadcrumbs and cornmeal into the last one and stir together. Dredge one tomato slice at a time, first in egg mixture, then in crumbs and meal mixture then into flour mixture. Heat oil until hot and begin placing covered tomatoes into skillet. Once skillet is full and tomatoes are cooking reduce heat to medium and cook about 3-4 minutes on each side. You want the tomatoes to be a golden color on each side. Remove to paper towel and let drain.

Smoked Chipotle Aioli

Put all ingredients in a food processor and blend until smooth.

To assemble burgers, slather top and bottom of buns with aioli. Place one pattie onto each bun and top with shredded lettuce, onion slice and fried green tomato. Enjoy!
